Blueberry Bran Muffins

These are soft, delicious muffins,  the blueberries make them so tasty. I had to make a second batch because they ended up being a yummy snack for my kids and me. All I can say is that enjoy this delicious muffin and please watch out for the blueberry stains on the kids’ clothes I made that mistake.

Video
  1. READY....GO..

Make sure you have all the ingredients you will need. Start by cracking the egg, then add honey to the same container with the egg.

Mix your wet ingredients in a separate bowl.
  2. WET INGREDIENTS

Add canola oil and whisk everything together. Once mixed add milk and whisk again. Then set the wet ingredients aside.

Mixing of the wet ingredients. When stirring the wet ingredients make sure you also also stir at the base of the bowl because the honey sticks at the bottom.
  3. DRY INGREDIENTS

In a seperate bowl add the following: wheat bran flour, all-purpose flour, cinnamon, and baking powder.

Add the dry ingredients in a separate bowl.
  4. Mix the dry ingredients,  then pour your wet ingredients into the container that has the dry ingredients mixture then mix everything together. Once you are happy add the blueberries.

When you pour the wet ingredients make sure you stir everything together again.
  5. FINAL STEPS

After mixing the blueberries, and the mixture on your muffin tray. Bake at 180 degrees for 25 minutes or until you are happy that your muffins are thoroughly cooked.

I used a large muffin tray. when filling the tray left enough space for the expansion of the dough.Use a toothpick of fork to check if the muffins are ready.
