Blueberry Pancakes

These no-sugar/no-salt pancakes have been my kids' go-to breakfast; they are straightforward to make and I always make a lot and store them in the freezer.

Instructions

  1. HOW TO PREPARE

Mash the banana, in a separate bowl add the dry ingredients, and mix them.

  2. In the bowl with the dry ingredients add blueberries, mashed banana, milk, and eggs. Add the butter to a frying pan and set the temperature to medium heat. Using a large cooking spoon add the mixture and fry till each side is golden brown and the center is cooked thoroughly.

  3. I highly recommend trying this recipe for your little ones, especially on a cold morning. The burst of sweetness from the blueberries mixed with the comforting warmth of the pancakes is a perfect way to start any morning.
