Kids might dislike carrots for a few reasons: taste, texture, or just how they look. To encourage them to eat carrots, try offering them in different ways and this cottage pie recipe is one of the ways to offer carrots to your kids. Carrots are vital for kids because they are packed with nutrients that promote growth, support the immune system, aid digestion, and maintain healthy skin and vision. Another good meal for the whole family to enjoy together.

    Have all your ingredients ready.

    Start with boiling some water, as the water is on the stove rinse the potatoes and carrots then peel the skin off. After that thinly dice the carrots, onions and the potatoes into large pieces. 

    Pour some cooking oil into a frying pan. Once the oil gets hot add the carrots and fry at medium temperature, stirring in between.

    Reserve about 80ml of boiled water and add beef stock stir and keep it aside.

    Add a pinch of salt to the boiling water then add the potatoes and let them cook for about 20 minutes till they are soft.

     

    I prefer thinly dicing the carrot and onions as it help in making sure they are fully cooked faster.
  2. KEEP GOING

    Once the potatoes are cooked, drain the water set the stove temperature to low, and add butter to the potatoes then stir. Once that's done add a dash of milk and mash with a fork. Set the potatoes aside. Once you are happy that the carrot is properly cooked add the onions and fry it for 10 more minutes.

    Preheat the oven to 200 degrees.

    Keep on stirring the carrots as you cook the potatoes. I prefer making sure that the carrots are well done and not burnt.
  3. ALMOST THERE......

    Once the carrots and onions are done, increase the temperature of the stove to high then add the mince. Quickly break the mince as it starts to cook. Once the mince is brown add the grated garlic and mix together.

  4. ALMOST DONE.....

    Add the pasta sauce followed by the beef stock mixture and stir, reduce the heat and slightly cover the the pan, let it cook for 5 minutes.

  5. FINAL STEPS...

    Once the mince is ready, dish the mince in an oven-proof dish. Spread the mashed potatoes and evenly spread them with a fork.

    Bake for 10 minutes, then turn on the grill for 2/3 minutes till the potatoes look a bit golden. Once that's done you can dish the meal with some nice veggies and some fruits on the side.
